We are not traditional aviation catering or restaurant food adapted last minute for a jet. Every detail is designed intentionally for flight service.

We work closely with a small number of flight attendants to maintain consistency, reliability, and trust, allowing us to deliver a more refined and dependable in-flight dining experience.

Placing an Order

First Time Consultation

Unless it is a rush order, new clients begin with a brief consultation with Chef Jimmy Matiz to review culinary preferences, dietary requirements, aircraft limitations, and service expectations.

Order Request

For ongoing orders, flight attendants select items from our curated aviation menu and submit their selections via email, including any special instructions or notes.

Proposal

A detailed proposal outlining the order scope, pricing, and service details is provided for review and signature. Any necessary changes or adjustments are finalized at this stage.

Payment & Confirmation

Once the proposal is signed and payment is received, the order is formally booked and confirmed. PO workflows available upon approval.

Frequently Asked Questions

We recommend placing orders at least 48 hours in advance to ensure proper planning and execution. Rush requests may be accommodated when possible, depending on availability.

We currently provide private aviation catering to LAX, VNY, SNA, BUR, and LGB.

Our aviation menu is curated and standardized to ensure consistency and reliability on board. Custom requests may be accommodated when possible and are reviewed on a case-by-case basis.

Yes. All dishes are developed specifically for in-flight service, with attention to temperature stability, ease of plating, and smooth cabin execution.

Every order includes clear reheating and plating guidance to ensure seamless service on board.

He refined his craft at El Celler de Can Roca, one of the world’s most respected three-Michelin-star restaurants, and has led luxury dining operations for high-profile private clients across Canada, Thailand, Colombia, Spain, and the United States.

In 2024, Chef Jimmy won Food Network’s Chopped, showcasing technical precision and performance under pressure. His background in hospitality management and advanced culinary training ensures every aviation order is planned with clarity, consistency, and real-world operational awareness.
